The Carver at 270mm is one of the longest blades I make and it can tackle from large turkeys and your lovely briskets to any filleting operation. The heel at 35mm allows for minimal knuckle clearance and the hollow grind which is an extra addition provides food release on mainly raw protein such as fish and meat.
